Категория виски Single Pot Still встречается только в Ирландии. Напоминает односолодовый виски, но отличается более резким вкусом и повышенной плотностью. Если напиток проходит все стадии изготовления на одной винокурне, его называют single pot whiskey, иначе это просто whiskey pot still. Сам термин был введен в обиход в начале 20 века, чтобы обойти американские законы, запрещающие писать на этикетке pure.
Pot still ― «сразу из перегонного куба», дистилляционное оборудование, благодаря которому можно быстро получить спирт из любого сырья, что значительно удешевляет и ускоряет производство. Как правило, для создания спиртов используют смесь соложеного и несоложеного молотого ячменя, иногда в него добавляют немного овса или пшеницы.
Полное разрешение на планировочные работы было получено 4-го января 2014 года, строительство началось в августе 2014. Ввод в действие винокурни начался в марте 2015 года. Первое производство, было намечено на апрель 2015 года, а в мае этого же года открыли центр для туристов.

The Phoenix Bird of Irish Whiskey: the story of the Teeling Distillery
The family-owned company Teeling was founded by former Cooley Distillery executive John Teeling and his sons after the Cooley Distillery was bought out by Beam Inc in 2012.
Teeling Distillery's founders set out to bring back the voice of independence in the Irish whisky category. That's why the symbol the Teeling family chose is the Phoenix bird rising from the distillation cube. This striking and memorable image symbolises the rebirth of the Irish whisky category.
The Teeling family has a distinctive entrepreneurial spirit and actions that set them apart from most - which is fully reflected in the whisky they create. It is known that the Teeling family had been distilling whisky in Dublin's Liberties since as early as 1782 through Walter Teeling, who opened a distillery on Marrowbone Lane. It was decided that a new distillery should be built on its historic site, Newmarket Square. And to make whisky according to traditional Irish technology Single Pot Still, by triple distillation of spirits.
Single Pot Still Whisky category is found only in Ireland. It resembles Single Malt Still Whisky, but has a harsher flavour and higher density. If the drink goes through all the stages of production at a single distillery it is called single pot whiskey, otherwise it's just whiskey pot still. The term itself was coined at the beginning of the 20th century in order to get around the American laws which forbid to put 'pure' on the label.
Pot still means "straight from the still," a distillation equipment which makes it possible to quickly obtain spirit from any raw material, which makes production much cheaper and quicker. As a rule, a mixture of malted and unmalted milled barley is used to create alcohols, sometimes some oats or wheat are added.
Full planning permission was received on 4 January 2014 and construction started in August 2014. Commissioning of the distillery began in March 2015. The first production, was scheduled for April 2015, and in May of the same year the visitor centre opened.
Teeling Whiskey Distillery was the first distillery in Dublin to open its doors in 125 years and revived the distilling tradition within the city limits.
