Как получается, что небольшая выдержка виски из южных стран сравнима с более долгой выдержкой шотландских виски? Расскажем на примере виски Kavalan из Тайваня. Но эти процессы абсолютно идентичны и с виски из Израиля, Индии и других жарких стран.
Климат Тайваня невероятно жаркий, средняя температура здесь 30 Сº, а влажность от 85 - 90%/ Что не только ускоряет процесс выдержки, но и несколько меняет его характер – виски Тайваня более яркие и насыщенные. Благодаря такому климату в год испаряется около 12-15% содержимого бочек, а виски приобретает зрелый характер за более короткий срок, чем в прохладном климате. В Шотландии средний показатель испарения от 2-3% в год. Примерно 1 год выдержки Kavalan приравнивается как минимум 4-5 годам выдержки в прохладном климате Шотландии. Поэтому линейка виски Кавалан имеет выдержку от 4 до 7 лет. При этом для максимального насыщения виски в бочках из-под хереса выдерживаются немного больше. Более длительная выдержка практически невозможна в жарком климате.
Differences in the ageing of whisky in different climates
How does a short maturation of Southern whisky compare to the long maturation of Scotch whisky? Let us take Taiwanese Kavalan as an example. But the processes are exactly the same as for whiskies from Israel, India and other hot countries.
The climate in Taiwan is incredibly hot and the average temperature is 30°C and humidity ranges from 85-90%. The latter not only speeds up the maturation process, but also changes the character of the whisky, making it brighter and more intense. The climate allows around 12-15% of the cask contents to evaporate per year and the whisky takes longer to mature than in cooler climates. In Scotland the average evaporation rate is between 2-3% per year. Approximately 1 year of Kavalan matured equates to at least 4-5 years in the cooler Scottish climate. The Kavalan range is therefore matured for between 4 and 7 years. The whisky is aged for a little longer in sherry casks to maximise the richness of the whisky. Longer maturation is virtually impossible in hot climates.
